My Go-To Vegan Burger Night: Beyond Burgers with Poppyseed Slaw

There are two kinds of weeknights. The kind where you cook a whole production, and the kind where dinner needs to be on the table in fifteen minutes and still feel like a treat. This is the second kind — and it might be my favorite meal in the whole rotation: a juicy Beyond Burger, melty cheese, crisp lettuce, and a mountain of sweet, crunchy poppyseed slaw piled right on top.

What I Used

  • Beyond Burger patties (mine came in my Hungryroot box)
  • Burger buns
  • Bagged coleslaw mix
  • Skinnygirl Poppyseed dressing — the secret weapon
  • Whatever toppings you love — lettuce, tomato, pickles, vegan mayo

How I Made It

  1. Make the slaw first. Toss the coleslaw mix with the poppyseed dressing until it is coated the way you like it. Set it in the fridge while the burgers cook — it gets better as it sits, and the chill against a hot burger is everything.
  2. Cook the burgers. Prepare the Beyond Burgers according to the package directions until they are hot all the way through with a nice sear.
  3. Toast the buns. A minute or two in the hot pan makes a real difference.
  4. Build it. Burger on the bun, then a generous pile of that slaw right on top. Add your other toppings and eat it over the plate — it is gloriously messy.

Why This Works

The slaw does all the heavy lifting. Sweet, tangy, and crunchy against a rich, savory burger — it is the contrast that makes the whole plate sing. No special trip to the store, no pile of dishes, and it tastes like something you would order at a cookout.

Make It Yours

Want heat? Add pickled jalapeños. Want more crunch? Extra pickles and a second scoop of slaw on the side. This one is a base recipe — dress it up however your weeknight needs.

Shop this recipe: I get most of my weeknight groceries through Hungryroot — healthy groceries with simple recipes, delivered. And for the extra groceries Hungryroot does not cover, Walmart+ is the bomb — groceries delivered straight to your door.
